Method of Cooking
To prepare this spicy and flavourful chicken recipe, take a deep-bottomed pan and heat a little oil in it. When the oil is hot enough, add cloves and cinnamon in it and wait till they pop out lightly. Finally, add sliced onions in the pan and saute them till light brown in colour.
Next, add whole garlic in the pan and keep tossing till the raw smell of garlic goes away, and then add ginger-garlic paste in it. Then, add chopped tomato and cook for a minute. When onions and tomato get mushy, add the cumin powder in the mixture and keep stirring. Now, add turmeric and chilli powder followed by coriander powder and cook for a while.
Finally, add chicken and salt in the pan and toss well to coat it with onion-tomato spice mixture. Open slightly the tip of cardamom and add it to the chicken and next, add the bay leaves. Cover it with a lid and cook for about 15 to 20 minutes or till cooked.
Add black pepper to the chicken and toss well till it gets coated with pepper. In the end, add about 2 cups of water in the pan and stir to mix well with chicken and spices to from a thick gravy. Let the gravy dry up or add more water and simmer if gravy is needed. Garnish with chopped cilantro and serve hot!
